If you can get some, the Penfolds Thomas Hyland 2006 shiraz is a must.

Some bottle shops may have some old stock,

anything Shiraz from McLaren Vale.

Oomah on special sub $11 and cellared for a while
ditto Ingoldby - can be found for $10 at First Choice on occasion
Rockbare
Mr Riggs
even Maglieri

Wynns Coonawarra Shiraz and Blend (striped label) a quality product too.
Brands Laira Coonawarra <$14 at Dan Murphys this week !!!!

I try to cellar for a few years and these have enough structure to improve !!!

jonno the address < Location: Adelaide > makes it local for you. (though Eden Road Cellar Door - Jimmy Watson winner - is 200m from my home in Canberra)

Also from McLaren Vale
Vinrock Shiraz - 2007 one of Huon Hooke's Top 50. I had the 2005 and it was liquid velvet
Gemtree Uncut Shiraz 2007 - not as full bodied but balanced and full o'fruit

and for a local (but hard to find): Hills of Fire Murrumbateman Cab Sav 2003 was super, suave, mellow, integrated

(and much more fun than the current market)

You fella's almost create,but not quite, the desire to take up drinking again. Hmmm, wonder how long one can cellar soda water?

benthonic, the Hedonist may still be available at Vintage Cellars, they did sell it, but now they've left SA, I've lost touch.

Inkwell will deliver, it's worth being on their mailing list if you want some.

I did get some gemtree on Grays for a very good price recently.

I've just opened a 2006 Koonunga Hill shirav cab to go with a Barra fillet, @ $10, it's a steal.
